Our Clac’bitou is a barrel shaped farmhouse cheese coming from Burgundy !
It is very similar looking to the Charolais cheese and comes from the same area.
For the production of Clac’bitou goats spend most of their time in the fields eating fresh grass.
This cheese has a sharp taste with a delicate nuttiness on the nose. In mouth those earthy notes will then let place to a long, creamy yet slightly leathery taste. The aftertaste will be on the nutty side.
Produced with raw goats’ milk.
