Feta Salad

Ingredients:

  • 200g feta cheese

  • 1 cup cherry tomatoes, halved

  • 1 cucumber, diced

  • 1/2 red onion, thinly sliced

  • 1/4 cup olives (black or green)

  • 2 tablespoons olive oil

  • 1 tablespoon red wine vinegar

  • Salt and pepper, to taste

  • Fresh parsley, chopped (for garnish)

Method:

  1. In a large bowl, combine the cherry tomatoes, cucumber, red onion, and olives.

  2. Crumble the feta cheese over the top of the salad mixture.

  3. In a separate small bowl, whisk together the olive oil and red wine vinegar. Season with salt and pepper to taste.

  4. Drizzle the dressing over the salad and gently toss everything together to combine.

  5. Garnish with chopped parsley.

  6. Serve immediately or refrigerate for a short time before serving to allow the flavors to meld.

Fresh Butter Gorgonzola Honey Toast ((Super Easy))

Ingredients:

  • Sourdough bread, sliced into any shape you like

  • 50g TCH unsalted butter

  • 80g Gorgonzola cheese

  • 10g honey

  • Walnuts

Method:

  1. Preheat the oven to 150°C

  2. Bake the bread slices to golden brown.

  3. Spread TCH unsalted butter on each slice.

  4. Bake until the edges are golden and crispy (5-7mins)

  5. Remove the toastand let them cool slightly.

  6. Top each slice with a slice of butter and Gorgonzola cheese.

  7. Drizzle honey over the cheese

  8. Garnish with some walnuts before serving.





Brillat Savarin Cherries Dessert

Ingredients:

  • 200g Brillat Savarin cheese

  • 300g fresh cherries, pitted

  • 100ml cherry liqueur (optional)

  • 2 tablespoons honey

  • 100ml heavy cream

  • Chopped pecan

  • Mint leaves for garnish

Method:

  1. Prepare the Cherries: In a bowl, combine the fresh cherries with the cherry liqueur (if using) and honey. Allow them to marinate for about 30 minutes to enhance their flavor.

  2. Whip the Cream: In a separate bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip.

  3. Prepare the Brillat Savarin: Slice the Brillat Savarin cheese into small portions or cubes.

  4. Assemble the Dessert: In serving dishes, layer the marinated cherries at the bottom. Add a layer of Brillat Savarin cheese on top.

  5. Finish with Cream: Spoon the whipped cream over the cheese and cherries.

  6. Garnish: Add chopped pecan and a few mint leaves on top.

  7. Serve: Enjoy immediately or chill briefly before serving. This dessert is best enjoyed fresh.
