Valençay is a goat’s milk cheese produced in Indre-et-Loire. It’s recognizable to its pyramidal shape and its blue to gray color coming from the ashes sprinkled on it before maturation.
This goats’ cheese is slightly creamy under the rind and has a very soft chalky and fresh paste that melts in the mouth.
