Chaource is a cheese coming from the Champagne region.
The name comes from the French words “Chat” (“Cat”) and “Ours” (“Bear”). Chaource is also the name of the city where it is produced.
Chaource has a chalky heart and a lactic taste. While maturing it will become creamier but also more pungent.
Our Chaource comes from the Tourelles Farm.
